Bang Bang Chicken Bites
Crispy corn flake-coated chicken bites tossed in a spicy bang bang sauce

Preheat oven to 400 degrees F

Measure out 50g crushed corn flakes into a bowl and crack and whisk 2 eggs in a separate bowl

Dip chicken cubes into the egg wash with one hand, hold up until excess egg cascades back into bowl

Drop the dipped chicken into crushed corn flakes and fully coat using your dry hand or a spoon, then place to the side. Repeat until all chicken is coated

Season coated chicken with salt, pepper and avocado oil spray

Place in the air fryer for 20 minutes at 400 degrees F. Shake at 10 minutes, then continue until cooked through to 165 degrees F or higher

Make bang bang sauce by combining 100g light mayo, 2 tbsp Frank's RedHot sweet chili sauce, 2-3 tbsp sriracha, lemon juice, and chili flakes
