    Boil 4 cups of water in a pot and add the soba noodles. Cook according to package instructions, usually about 6-8 minutes.

    While the noodles are cooking, prepare the vegetables. Julienne the carrot and cucumber, and chop the green onions.

    In a large bowl, combine the cooked kimchi, gochujang sauce, rice vinegar, and sesame oil. Mix well.

    Once the noodles are cooked, drain them and rinse under cold water to stop cooking. Add to the bowl with the sauce.

    Add the julienned vegetables and bean sprouts to the bowl, and toss everything together until evenly coated. Sprinkle sesame seeds on top before serving.
