Broken Noodle Skillet Lasagna
A quick and delicious dinner made from leftover ricotta, broken lasagna noodles, and seasonal vegetables, perfect for cleaning out the fridge.

Bring a large pot of salted water to a boil and cook the broken lasagna noodles according to package instructions until al dente.

While the noodles are cooking, heat olive oil in a large skillet over medium heat. Add sliced zucchini and cook until tender, about 5 minutes.

Add minced garlic and fresh spinach to the skillet, stirring until the spinach wilts.

Once the noodles are cooked, drain them and add them to the skillet with the zucchini and spinach. Mix well to combine.
