Classic Key Lime Pie
A creamy and tangy key lime pie topped with golden-toasted Swiss meringue.

Preheat the oven to 350°F (175°C). In a mixing bowl, combine 1.5 cups all-purpose flour, 0.5 cups granulated sugar, and 0.5 cups melted unsalted butter. Mix until crumbly.

Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 10-12 minutes or until lightly golden. Remove from the oven and let cool.

In a separate bowl, whisk together 6 large egg yolks and 0.5 cups key lime juice until combined. Add 1 can (14 oz) sweetened condensed milk and mix until smooth.

Pour the lime filling into the cooled crust and bake for an additional 15 minutes. Remove from oven and let cool to room temperature.

For the meringue, beat 4 large egg whites with 0.5 tsp cream of tartar until soft peaks form. Gradually add 1 cup granulated sugar while continuing to beat until stiff peaks form. Spread the meringue over the cooled pie.
