Healthier Mini Pop Tarts

In a large bowl, combine the all-purpose flour, sugar, and salt.

Add the cold butter and cut it into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

In a separate bowl, mix the Greek yogurt, egg, and vanilla extract together. Slowly add this to the flour mixture and combine until a dough starts to form.

Turn the dough out onto a floured surface and knead gently until smooth. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.

Preheat your oven to 350°F (175°C). Roll out the dough on a floured surface to about 1/4 inch thick. Cut into rectangles, place a spoonful of strawberry jam on half of the rectangles, and top with the other half. Seal the edges with a fork. Bake for 15-20 minutes or until golden.
