    Prepare fries according to package instructions and set aside.

    Mix together all chimichurri ingredients in a small bowl.

    Taste and adjust chimichurri as needed.

    Season the steak on both sides generously with salt and pepper.

    Heat a cast-iron skillet over medium high heat.

    Once the pan is extremely hot, add the steak and do not touch for three minutes.

    Flip the steak to the other side for another three minutes.
