Preheat oven to 350F.

In a large bowl, whisk together the eggs and peanut butter until completely smooth.

Add in the oats, cinnamon, baking soda, and chocolate chips. The batter will be sticky and that is ok!

Line a baking tray with parchment paper and use a cookie scoop to make 12 cookies.

Bake for 9-11 minutes. 9 minutes for a softer cookie, and 11 minutes for a crunchier cookie.
