    Rinse and drain the bulgur wheat. Place it in a bowl and add enough hot water to cover it. Let it sit for about 30 minutes until it absorbs the water and softens.

    While the bulgur is soaking, chop the parsley and mint finely. Dice the tomatoes and cucumber into small pieces.

    In a large mixing bowl, combine the chopped parsley, mint, tomatoes, cucumber, and softened bulgur.

    Drizzle the olive oil and lemon juice over the salad. Season with salt and black pepper to taste.
