Thick Boy McMuffins
Protein-packed chicken and egg muffin sandwiches with melted cheese and English muffins.

Combine 16 oz of 96/4 chicken with 1 tablespoon of each seasoning. Mix evenly throughout the chicken.

Make five 3.2-oz balls of chicken and smash the patties down into a large skillet at high heat. Smash them with a spatula as thin as possible; fit two at a time if needed. Flip after 5 minutes and ensure internal temperature reaches 165°F or higher before removing.

Spray each muffin opening in a muffin tin with nonstick spray, then pour 600 grams of egg white into five of the openings evenly.

Distribute 180g reduced-fat cheddar evenly among the 5 muffin tins.

Bake in the oven on the middle rack at 400°F for 20 minutes or until cooked through. Ensure 160°F in the center.

On a separate baking sheet at 400°F, bake English muffin buns for 5 minutes, with each bun getting a slice of Velveeta.

Once everything is cooked, assemble your sandwiches. Wrap in foil and refrigerate for a couple of days at most.
