Chicken Al Pastor Mac N Cheese
Protein pasta with al pastor marinated chicken and blended cheese sauce, topped with cilantro and white onion.

Preheat oven to 400 degrees (once meat is marinated and ready to cook).

Bring about 3 cups of water to a boil and cook protein pasta for 7-8 minutes.

Make al pastor marinade by blending 50ml orange juice with herbs and spices until smooth.

Place 3 small chicken breasts (15 oz) into a zip lock bag with al pastor marinade and chopped pineapples if desired. Marinate for 1-2 hours or overnight in refrigerator.

Place marinated chicken on a baking sheet and bake at 400 degrees for 22 minutes. Ensure internal temperature reaches 165°F or higher. Optional: sear both sides in a hot pan before baking.

Chop cooked chicken into cubes and set aside.

In a blender, make mac sauce by blending all sauce ingredients until completely smooth.
