Creamy Chicken Pesto Pasta
A creamy pasta dish with seasoned chicken thighs, pesto sauce, and cottage cheese. High in protein and ready in under 40 minutes.

Chop raw, skinless, boneless chicken thighs into quarter-sized pieces and place in a bowl to season.

Season chicken with salt, pepper, garlic salt, onion powder, sage, and basil (1 tbsp each).

Mix seasonings into chicken thighs and place in a nonstick skillet at high heat with nonstick spray.

Follow pasta box directions and boil noodles for approximately 10 minutes.

Make creamy sauce by blending together 60g pesto, 200g fat-free cottage cheese, 1-2 tbsp basil paste, 1 tbsp minced garlic, and 20-30ml almond milk.

Cook chicken for approximately 12-14 minutes until golden brown and cooked through, breaking up pieces with spatula.
