Cube 10 oz of lean ham and cook in a pan at medium heat with avocado spray until the edges brown. Set cubed ham to the side.
Dice all veggies and sauté in a pan at medium heat with avocado spray.
Whisk together 11 eggs and make 5 equal sized flat omelets.
Place each omelet in a tortilla with 35g reduced fat cheddar, 2 tbsp of nacho cheese, and an equal portion of ham and sautéed veggies.
Roll them up and fry in a pan until edges are golden brown.
