Instant Pot Lemon Garlic Chicken

Ingredients
- 6 piece Chicken Thighs
- 3 clove Garlic
- 1 tsp Garlic powder
- 1 tbsp Olive Oil
- 1 tbsp Butter
- 1 piece Lemon
- 1 tbsp Italian Seasoning
- 1 tsp Salt
- ½ piece Onion
- 1 tsp Paprika
- ⅓ cup Chicken Broth
- ½ tsp Black Pepper
Instructions
- Prep garlic and onion. Mince 3 cloves of garlic and use half an onion.
- Prep chicken thighs by cutting off excess fat with kitchen scissors and blotting moisture with paper towels on both sides.
- Make seasoning mix: combine 1 teaspoon garlic powder, 1 teaspoon salt, 1 teaspoon paprika, and half teaspoon black pepper. Mix well.
- Transfer chicken thighs to a bowl and season all over with the seasoning mixture, making sure to coat the undersides well.
- Turn Instant Pot to brown function (or saute mode if brown function unavailable). Add about 1 tablespoon olive oil.
- Add chicken thighs skin side down and brown for about 2 minutes.
- Flip chicken thighs and brown for another 2 minutes on the other side.
- Remove browned chicken thighs and set aside on a plate.
- Switch to saute mode. Add the minced onion directly to the pot.
- Add 1 tablespoon butter to the pot with the onions.
- Add the minced garlic to the pot.
- Let onion and garlic cook for 3 to 4 minutes until the onion becomes slightly translucent.
- Add the juice of 1 lemon to deglaze the pot.
- Add 1 tablespoon Italian seasoning and mix well. Cook for about 1 minute.
- Add the browned chicken thighs back into the pot skin side up.
- Turn off saute function and add 1/3 cup chicken broth. Mix gently.
- Put the lid on the Instant Pot and set the vent to pressure cook.
- Set pressure cook function to high pressure for 8 minutes.
- Allow natural pressure release before opening the lid.
- Remove lid and take out chicken. Drizzle sauce from the bottom of the pot over the chicken thighs.
