Pica Pollo (Dominican Fried Chicken)
Authentic Dominican fried chicken marinated in garlic, lime, and spices, then coated in seasoned flour and fried until golden brown.

Cut the whole chicken into pieces.

Rinse the chicken pieces under cool water and clean them with lime.

Using a pestle and mortar, smash all the garlic cloves from the whole head until they form a paste-like texture.

Add 1 tbsp of salt to the garlic paste.

Add the garlic paste to the chicken pieces along with the juice and zest from 2 limes, pepper, Dominican oregano, and sazon completo.

Let the chicken marinate for 30 minutes.

In a shallow bowl, combine the flour and adobo and mix well.
