Divide 12.5 oz of 96/4 beef into 5 equal patties. Place on parchment paper, roll into balls and season well with salt, pepper, and gourmet burger seasoning.
Using another sheet of parchment paper, flatten patties as thin as possible. Cook in a pan at high heat for 2-3 minutes on each side until internal temperature reaches 135°F minimum.
Toast buns in oven at 425°F for 2-3 minutes or in a pan.
