Tender chicken thighs cooked in a mouthwatering lemon garlic sauce using an Instant Pot. Perfect for busy weeknight dinners with bright citrus flavor.

Prep garlic and onion. Mince 3 cloves of garlic and use half an onion.

Prep chicken thighs by cutting off excess fat with kitchen scissors and blotting moisture with paper towels on both sides.

Make seasoning mix: combine 1 teaspoon garlic powder, 1 teaspoon salt, 1 teaspoon paprika, and half teaspoon black pepper. Mix well.

Transfer chicken thighs to a bowl and season all over with the seasoning mixture, making sure to coat the undersides well.

Turn Instant Pot to brown function (or saute mode if brown function unavailable). Add about 1 tablespoon olive oil.

Add chicken thighs skin side down and brown for about 2 minutes.

Flip chicken thighs and brown for another 2 minutes on the other side.

Remove browned chicken thighs and set aside on a plate.

Switch to saute mode. Add the minced onion directly to the pot.

Add 1 tablespoon butter to the pot with the onions.

Add the minced garlic to the pot.

Let onion and garlic cook for 3 to 4 minutes until the onion becomes slightly translucent.

Add the juice of 1 lemon to deglaze the pot.

Turn off saute function and add 1/3 cup chicken broth. Mix gently.

Put the lid on the Instant Pot and set the vent to pressure cook.
